How to make Paneer

Paneer is fresh cheese made from curdled milk and is very commonly used all over India. It is also called cottage cheese and chhena. In this post, we would like to explain how to make Paneer. This is the process we follow, however you will come across different methods on this with slight variations when you search on Internet.

Ingredients:

  • Milk – 1 litre
  • Curd – 1.25 cups (Curd can be of any consistency)

Preparation Time: 10-15 mins.

Note:

  1. Depending on the type of milk (low fat, toned, full cream, etc.), the paneer quantity obtained and time taken for milk to curdle will vary.
  2. Many people use lemon juice or white vinegar to curdle the milk. Personally, after trying all the methods we found that the paneer obtained by using curd is softest and of smooth consistency. But, if you do not want to use curd, you can use white vinegar or lemon juice.

Method

Bring the milk to a boil in a large container and then turn the heat to lowest setting.

Now, add little bit curd and sprinkle few drops of water to the milk, and let the heat remain on low flame throughout.

Keep adding little curd at regular intervals (not all at once).

Once in a while, gently stir once so that the milk does not stick to the vessel. Do NOT stir vigorously or frequently.

Slowly, the milk will begin to curdle and once all the water separates from the cheese/paneer completely, stop adding curd.

Switch off the heat and drain the water well from the container using a muslin cloth (if you want in cube form) or any strainer (if you want in crumbled form). Do not throw this water as it very nutritious. It is called whey and it is very rich in proteins. When cooled, you can store it in refrigerator upto 2-3 days and use it to cook rice or knead dough.

If you want the paneer in cube form, place it in centre of muslin cloth and fold cloth from all sides roughly into a thick rectangular shape. Put some heavy weight over it and leave it for couple of hours for it to set properly. However, if you want the paneer in crumbled form, then just directly use the paneer strained using any strainer.

It’s celebration time – Tingle Your Taste Buds turns 4! It has been an incredible journey so far and what fun it has been sharing cooking recipes and tips with all our patrons. We have always believed that “Food=happiness” so we are passionate about spreading joys through food. What started as a small Facebook page has now become a fast growing Cookery website and we cannot thank you all enough for this. Heartfelt gratitude for the continued support and encouragement 🙂 We wanted to do something special to commemorate this remarkable milestone and what better way to celebrate than to do it through food again! We conducted a Baking Contest for which we received a wonderful response. Out of the many delicious baking recipes that we received, we chose the top 3 recipes based on the uniqueness of the dish, presentation, ease of understanding of the recipe, clarity of explanation of the method, flavors and ingredients used and the aesthetic value. Delectable Desserts – well, my mouth is already watering just writing this down! But this time this indulgence is due to a special reason. Recently, Tingle Your Taste Buds achieved an important milestone. We became the number 1 search result for Google Search of “Tingle Your Taste Buds”. When we had launched this website around 8 months back, we were on page 8 and we knew the journey to land ourselves on the first page is not going to be easy. But thanks to all our readers, we are where we are today! Our focus always was to provide quality information to our patrons and we promise to continue to strive towards excellence. We are driven by our passion to make cooking a fun and simple process for everyone, and we look forward to your continued support in future. This is just the beginning of this wonderful voyage with you all and we aim to achieve a lot more. On this positive and happy note, we thought it was the right time to celebrate a “Delectable Desserts” week as it was also the demand of some of our readers. So this week at Tingle Your Taste Buds, we present two delectable desserts for you – “Coconut Barfi” and “Shakkar Para”.

Coconut Barfi is a very enjoyable Indian sweet dish which requires very few ingredients and yet is flavorsome. It has a soft texture due to which it melts into the mouth easily and does not feel heavy on stomach unlike many sweet dishes. It is also considered auspicious as it is used as offerings during religious ceremonies at some places.

Shakkar Para (also known as Rajasthani Petha) is a traditional Indian sweet which is commonly prepared during festivals. The best thing about Shakkar Para is that it is medium sweet and is more like a “snack” than a dessert.

Soup Delights

I once read a very interesting quote about soups which read – “There is nothing like soup. It is by nature eccentric: no two are ever alike, unless of course you get your soup in a can.” – Laurie Colwin, ‘Home Cooking’ (1988). Isn’t this so true? There are countless types of soups that can be prepared and one can customize them in any which way, and would still be right ! As the winter season kicks in in India and many other parts of the world as well, it is the perfect time to present some Soup Delights to our readers from our kitchen. I personally love spending evenings with my loved ones over a hot and piping soup accompanied by light snacks.

The first of our soup delights this week is Hot and Sour Soup. Hot and Sour Soup with a lot of vegetables is a flavorsome and wholesome soup that is sure to tingle the taste buds of your family. It has quite a few variations of which the recipe we are sharing is an easy to comprehend one without any compromise on the taste.

The second of our soup delights this week is the evergreen Tomato Soup. Tomato Soup comes to mind first whenever someone mentions “soup”. It is indubitably the most popular and commonly relished soup across all countries. There is nothing more refreshing than having home made tomato soup on a cold day and it is healthy as well! Usually, tomato soup is prepared using only tomatoes but our recipe includes a bit of carrots and onions as well which gives the taste of the soup an extra oomph and also a lovely color. This recipe from Mom was my first ever soup attempt  for a get-together, and it is so simple that I got it bang on!

Yes, it’s that time of the year – when we are all busy cleaning, decorating and renovating our homes, when we are running around for shopping to purchase new clothes, sweets, gift for loved ones, fire crackers and so much more, when we are putting in our best efforts to make our homes look beautiful and divine! Diwali, the “Festival of Lights” is here! Apart from all the fun of bursting crackers and performing the Puja rituals, an integral part of Diwali is preparing special delicacies and relishing them with your near and dear ones. I, personally, love that moment when we all sit together and have the amazing dishes prepared by Mom on the auspicious occasion of Diwali.

Quick Healthy Recipes

We received innumerable requests from our subscribers for more recipes which are quick to prepare but also healthy. So this week, at Tingle Your Taste Buds, we present quick healthy recipes for you which will be loved by your family and you can get your kids to get all that nutrition while also pleasing their taste buds. The first dish from our kitchen this week is Gajar Methi Saag. Methi or Fenugreek leaves have a plethora of health benefits, and are strongly aromatic and flavorful. They have a slightly bitter taste which makes it difficult to have it all by itself by most. In India, fenugreek leaves are normally cooked along with potatoes to make a delicious main dish. However, for health conscious folks who want to avoid having potatoes, Gajar Methi Saag is a fantastic option to consume this powerful “herb”. Carrots wondefully complement the bitterness of Methi and the dish tastes excellent with any kind of rice.

The second dish from our kitchen this week is Poha which is a very common breakfast item in India. It is cooked in various ways across households and if you go to a restaurant for buffet breakfast, you are very likely to find it on the menu. Poha is flattened/beaten rice and is an easily digestible form of raw rice. So much can be done with it that it can actually be referred to as a convenience food. The recipe of Poha which we are sharing can be had at any time of the day whenever one wants to have anything light.

Sweet Temptations

It’s time for some Sweet Temptations on Tingle Your Taste Buds – two glorious dessert recipes that will leave you and your guests asking for more and more ! The first dessert recipe of the week is Gond Ke Laddu which is a common preparation in every Indian household especially during winter season. It is a reliable sweet dish which is loved by one and all. It is also advised to have them during pregnancy as they contain number of dry fruits and provide instant energy.  Every time I visit my Mom or she visits me, she definitely makes these laddus for us and this is truly one of her specialty dishes famous among everyone who has had it. Mom also presented this dish for a cookery contest organized by Hindu daily held at Novotel, Visakhapatnam among 400+ other dishes and her laddus were appreciated a lot by everyone. 

The second dessert recipe this week is of Pina Colada Custard which has been shared with us by our Guest Chef, Hyma Chinta. The first thing that caught our attention about this recipe is its attractive look which makes one want to jump at it the moment one sees it! This is a custard recipe with a twist and is an excellent option for serving to guests due to its unique and rich flavours. The pineapple garnish adds a wonderful fruity touch to the dessert – this dish is a perfect combination of taste and presentation!

Savory Specialties

This week at Tingle Your Taste Buds, we bring to you all two luscious Savory Specialties from two awesome Moms. The first specialty dish is Ragda Patties which is a very palatable chaat dish and a part of the world famous street food of Mumbai. This recipe has been shared with us by our Guest Chef for this week, Reena Dangi, on the special occasion of Mother’s Day. Who better than her to share a Mother’s Day Special recipe with us as she is a super Mom herself with a beautiful and talented daughter. She also runs her own venture in parallel and handles all aspects of her life with equal panache. She strongly believes that it is important to dedicate quality time to your kids to make a sensible, sensitive and intelligent human being out of them. She also has a great passion for cooking and is always willing to try out new, interesting recipes. She also realizes that in today’s time, people are always running short of time so she chose a dish which does not require too much time and effort if one has done the basic preparations in advance. This tasty Ragda Patties recipe is dedicated to all the super women of this world whom we call “Mothers” – the world is truly a special place because of the wonderful Moms in it. We thank Reena for sharing this recipe and for being a great and inspiring mother – hats off!

Dahi Vada is our Chef’s Special recipe this week which is a specialty of another super Mom – my Mom 🙂 Honestly, Mom makes the best Dahi Vadas in the world – am yet to have as tasty Dahi Vadas anywhere else. At our home, no festival is complete without appetizing Dahi Vadas prepared by her. The topping of sweet tamarind chutney in this dish adds a unique flavour to it and makes it an extremely enjoyable one.  Since this is our Mother’s Day special week, I want to express that am truly grateful to have got a strong, talented and righteous person as my Mom and undoubtedly, whatever I am today is all because of her. I know I do not say this very often but thank you for everything Mom and you mean more than what words can ever express.

We had received a number of requests to post recipes of Main Dishes which can be made for special occasions especially when you have guests at home. So Tingle Your Taste Buds presents recipes of two sumptuous main dishes for you all this week!

A paneer (Cottage cheese) item is usually a must have in the menu during any occasion or get-together. Infact, it’s a common joke among Indians that paneer is the “chicken” of the vegetarians implying it is an equally tasty and luxurious food item. One can make a multitude of dishes using paneer not just for main course but for snacks or appetizers as well. Paneer is high in protein and calcium content, and many people who have lactose intolerance or cannot digest milk are advised to have paneer instead regularly. It is also rich in minerals, vitamins and omega 3 fatty acids due to which it provides wholesome nourishment to adults as well as kids. Our Guest Chef this week, Ruchi Nitin Kohli, has shared with us the recipe of Kadai Paneer, which is one of the most popular paneer dishes. It is rich, creamy and a dish that is a true delight to the taste buds. 

In most cases, anything which is extremely healthy is not as tasty and a famous example of this are the vegetables of the “Gourd” family. Their health benefits are very well known to everyone but they are also the most despised vegetables. As a child, even I never liked having them and my mom truly had a hard time to get me to have them. They ought to be an essential part of our diet but then who is going to convince the taste buds?! This is the situation when mothers have to come up with different attractive ways of intelligently incorporating such vegetables into dishes which taste great. Many a times, unless told, the person having the dish would not even realize that the dish actually contains a vegetable which they are repelled by. Lauki (Bottle Gourd) Kofta is one such dish – its delicious and rich flavours make for a perfect main course dish for your guests and at the same time, passes on the health benefits of Bottle Gourd to them!

Summer Beverages

It’s been so hot this summer that we all keep looking for recipes to beat the heat – there is never an end to cooling summer beverages! This week Tingle Your Taste Buds presents two diverse and energizing beverage recipes which are bound to leave one feeling exhilarated and raring to go.

Our first beverage recipe this week is the super hydrating Watermelon Juice. Like all fruit juices, it has a lot of health benefits, is low-fat and boosts the immune system. This is a very quick recipe and can be made without much effort. It’s a known fact that watermelons, whether in the fruit form or juice form, are natural hydrants due to their high water content (Around 90% of it is water !!!) A lesser known fact is that the watermelon seeds which most of us throw away have high quantities of iron. So, instead of discarding the seeds, you can crush them and add it to the juice or the fruit in the crushed, powdered form.

Our second beverage recipe is Sweet Lassi – a favourite traditional drink in India which is relished by one and all. It is a thick yoghurt based drink and this recipe can be modified to add flavours of your choice to make drinks like Mango lassi, Strawberry lassi and many other varieties. The authentic Punjabi lassi is an unmatchabale thirst quencher and is probably the only beverage that can satisfy your hunger too. I can never ever forget the Patiala Lassi (served in a tall jug) I had in Amritsar – was an absolute divine experience!
