This recipe of Tricolored Veggie Bake is the 1st Runner Up recipe in our 4 Year celebration baking contest. This was submitted to us by Shweta Gupta from Kolkata. She is a fun-loving person with great interest in cooking. She loves to experiment with new dishes. This dish Tricolored Veggie Bake was made by her post her marriage. It was loved by all her family members. Kids thoroughly enjoyed it and elders appreciated it. This dish can never go wrong when you have to bake something as it is simple to prepare and has a unique taste. The three tricolored layers look distinctive and tempt people to the core!
For White Sauce
- Butter – 1.5 tablespoons
- All purpose flour or Maida – 1 tablespoon
- Milk – 1 cup
- Cheese – 2 tablespoons
- Salt to taste
- Sugar to taste
- Pepper to taste
- Fresh Cream – 1/2 cup (Amul cream can be used)
For Spinach Layer
- Spinach – 1 bundle, boiled and chopped.
- Butter – 1 tablespoon
- Finely Chopped Garlic – 2-3 cloves
- Finely Chopped Onion – 1/2 cup
- Fresh Cream – 1/2 cup
- White Sauce – 2 tablespoons
- Salt, pepper and sugar to taste
- Chilli Flakes
For Red Sauce Layer
- Butter – 50 gms.
- Finely Chopped Garlic – 3 to 4 cloves
- Finely Chopped Onions – 2
- Fresh Tomatoes – 750 gms.
- Tomato Puree – 100 gms.
- Tomato Sauce – 3 tablespoons
- Salt, Sugar and Pepper to taste
- Chilli Flakes
- Macaroni – 1 cup, Boiled
- Assorted Vegetables – 2 cups (Carrots, Beans, Corns, Bell Peppers, Broccoli)
Servings: 6-8 Persons
Preparation Time: 45 mins.
Cooking Time: 30 mins.
To make white sauce, heat butter in a pan, add maida and cook for a while. When it changes its colour slightly, add milk and stir continuously to avoid lumps. Add salt, sugar, pepper, cheese and cream. You can also add oregano and chilli flakes as it enhances the flavour.
To make spinach layer, heat butter in a pan, saute garlic and then add chopped onions. When onions turn pink, add boiled spinach and saute for 2-3 mins. Add cream and cook little more. Now turn off the heat and add 2 tablespoons white sauce. Add salt, pepper, sugar, oregano and chilli flakes.
For the red sauce, blanch and de-skin tomatoes. Grind it to a puree when cooled. Heat butter and then saute garlic and onions. Add the blanched puree and cook for a while. Add tomato sauce and ready-made tomato puree. Now add all the herbs and seasonings. In another pan, heat butter and add all the assorted vegetables and saute for a while. Add salt, pepper and boiled macaroni. Then add the cooked red sauce to this.
For assembling, in a baking dish, place the spinach filling first and then put the red sauce macaroni and vegetables for the second layer. Top it up with white sauce and grated cheese. Bake at 180 degrees for 15 -20 mins.
