Sweet Lassi is a favourite traditional drink in India which is relished by one and all. It is a thick yoghurt based drink which is a sure shot winner. This recipe can be modified to add flavours of your choice and make drinks like Mango lassi, Strawberry lassi and many other varieties. It is enjoyed all year through but it is all the more satisfying and thirst quenching during summer.
- Fresh curd (thick) – 1 cup
- Water – 1/2 cup
- Sugar – 1 tablespoon
- Malai (Cream) – 2 tablespoons
- Crushed Ice/ Ice cubes
Serves: 1 person
Preparation Time: 10 mins
Churn curd well in a narrow mouth utensil or glass. (Blender or a mixer can also be used).
Add water and sugar, and churn again till sugar is dissolved.
Add one tablespoon of malai and ice and churn well.
Refrigerate for cooling. Top it up with the remaining malai and serve chilled Sweet Lassi.
Tip1: If curd is not thick, adjust the water quantity in the recipe as per the required consistency. Sweet Lassi is best enjoyed when thick in consistency.
Tip2: If curd is sour, use little milk instead of water.
