  • Besan(Gram flour) – 1 cup
  • Sugar – 2 cups
  • Oil for frying
  • Sweet soda(Sodium bi-carbonate) – 1/4th teaspoon
  • Food liquid colour (orange and red)
  • Silver foil – one (Optional)
  • Dry fruit for garnishing Sweet Boondi (optional)

Servings: 8-10 persons

Preparation time: 20 mins.

Cooking and Soaking Time: 70 mins.

Method

In a kadhai, mix sugar in one cup of water and boil it for 3- 4 minutes till sugar gets dissolved and syrup becomes sticky. Keep aside.

Take a big bowl. Add besan and soda. Mix well with half cup of water and keep aside for five minutes.

Put oil in a pan. Heat the oil and once it is hot keep it on low flame.

Take perforated spoon and add little batter for checking the correct consistency to ensure dropping of batter in circular droplets. If that is not the case, add little water till consistency is correct.

Divide the batter in two parts. Mix orange colour in three fourth portion of the batter and red colour in one fourth portion of batter.

Two perforate spoons will be required – One for dropping boondi in the oil and one for draining from oil.

For dropping boondi in oil, keep perforated spoon 3 to 4 inches above the oil. Tap the edge of spoon for easy dropping of the boondi. Keep gas on low flame while dropping boondi and then increase it to medium while frying. Fry boondi till colour changes and boondi becomes crispy.

Drain boondi and drop in sugar syrup. Leave for one hour for soaking. While boondi gets soaked, keep on turning gently at intervals for proper soaking.

Take out boondi in bowl and decorate with silver foil and dry fruits if you wish to do so. Sweet Boondi is ready to be relished.
