Paneer Bhurji is a very straight-forward and effortless dish. Paneer has numerous health benefits and is most widely used for preparing dishes for parties and special occasions. While most of the dishes made out of it are elaborate and rich, paneer bhurji is quick and light. It is a personal favorite and this recipe can hardly go wrong.
Ingredients:
- Paneer – 250 gms.
- Potato, finely chopped – 1/2 cup
- Onion, finely chopped – 3/4 cup
- Carrot, finely chopped – 1/2 cup
- Boiled Peas – 1/4 cup
- Tomato, finely chopped – 1/4 cup
- Ginger – 1/2 inch piece
- Green Chillies – 1 to 2 pieces
- Coriander Leaves, Finely chopped – 1/4 cup
- Black Pepper Powder – 1/2 teaspoon, level (not heap)
- Salt to taste
- Oil – 2 tablespoons
Servings: 3-4 persons
Preparation Time: 20 mins.
Cooking Time: 10 mins.
Method
Grate the paneer or cut it into very small pieces. If the paneer is home-made, it can be easily crumbled into a bhurji form with hands. Grate the ginger piece. You can either finely chop the green chillies into small pieces or you can slit them length-wise into two.
Now take a pan/kadhai and heat oil. Once oil is hot, add onions, grated ginger, potatoes, carrots and green chillies. Cook for few minutes.
Then add tomatoes and peas, and cook for few more minutes till all the vegetables are well-cooked.
Now add paneer and mix well. Add salt, black pepper powder and coriander leaves, and mix again. Cook for another minute and switch off the stove.
Paneer Bhurji is ready. Serve hot with roti/paratha/rice.
