Bharwan Parwal

It’s normally quite a task to get many people to have green vegetables – be it kids or adults. In such cases, one has to keep finding ways to lure them into having the greens by attractive presentation or by enhancing the taste with a variety of flavours. A perfect combination of health and taste – no one can repudiate this appealing Bharwan Parwal dish.

Bharwan ParwalIngredients :

  • Parwal (tender) – 250 gms (7-8 pieces)
  • Coriander(Dhania) powder – 2 tablespoons
  • Turmeric powder – 1/2 teaspoon
  • Red chilly powder – 1/2 teaspoon
  • Mango powder (amchoor) – 1/4 teaspoon
  • Fennel (sounf) seeds – 1/4 teaspoon
  • Cumin seeds – 1/4 teaspoon
  • Asafoetida(hing) – 1 pinch
  • Oil – 1 tablespoon
  • Salt to taste

Preparation Time: 10 mins

Cooking Time: 10-15 mins

Method

Cut tips of parwal from both sides and peel the skin. If parwal is very tender, scrape the skin.

Cut parwal pieces lengthwise on one side taking care that the pieces do not split completely and keep aside.

For stuffing masala, put coriander powder, turmeric powder, red chilly powder, mango powder and fennel seeds in a bowl. Pour 2-3 drops of oil and salt (as salt is to be sprinkled while cooking, less salt should be used in stuffing) and mix well.

Fill parwal one by one with stuffing masala gently and slowly.

Pour rest of the oil in a pan and heat it after adding cumin seeds and hing. When cumin seeds become brown, add stuffed parwal one by one in the pan. Sprinkle little salt on all pieces of parwal and cover with a lid. Let it cook on medium heat. Keep turning parwal from time to time so that it is cooked uniformly.

When parwal is brown and soft ,turn off the heat and your Bharwan Parwal is ready.

Serve Bharwan Parwal hot with rice or rotis.
