Vanilla Ice Cream is almost synonymous with ice cream. It can be prepared in numerous ways, which also varies according to the geographical location. For a long time, I used to relish only vanilla ice cream before I took to the taste of other flavors. Ice creams are possibly the most common of the desserts worldwide. I have fond memories of bonding with my friends during college days over ice creams available in a parlor close to our hostel. After the birth of my daughter, I started preferring home-made ice creams to the ones available in store for her. That is when my mom came up with this simple and quick recipe to prepare the elementary yet delicious vanilla ice cream at home.
- Condensed Milk (Milkmaid) – 400 gms.
- Almonds -15-20 pieces (Roasted and cut in small pieces)
- Chilled Fresh cream(Amul or any brand that is available) – 600 ml
- Vanilla essence – 1 teaspoon
- Ripe papaya puree – 1/2 cup (Optional)
Servings: 7-8 persons
Preparation time: 2 Hours for refrigeration and 30 mins. for preparation
Setting Time: 10 to 12 Hours
Take a bowl and add chilled fresh cream to it. Place this bowl inside another bigger bowl having ice cubes.
Whip the fresh cream with hand blender/mixer till it becomes soft, smooth and fluffy.
Add condensed milk to the whipped fresh cream and whip again with hand blender/mixer.
Now add papaya puree and vanilla essence to the whipped mix. Papaya puree is added primarily for color and for packing in a punch, so it is optional. You can skip adding it, in which case just add the vanilla essence at this stage.
Mix well and keep the bowls as is in the freezer for around 2 hours.
After two hours, take out the bowls and again whip the vanilla ice cream mix with a hand blender/mixer for a minute or two.
Then add this mix to ice cream tray or mould. Put in the deep freezer for setting for 10 to 12 hours.
Once Vanilla Ice Cream is set properly, it is ready to be relished anytime. While serving, sprinkle with cut almond pieces.
