Dal ki Poori and Aam ki Lunji

Dal ki Poori and Aam ki Lunji is a unique Rajasthani dish which is Mom’s specialty. It is perfect for get togethers or parties, and is a treat to one’s taste buds. The combination of the crispy poori and the raw mango flavour in Lunji makes for a thoroughly gratifying and memorable meal in Dal ki Poori and Aam ki Lunji. In case mangoes are not in season, Dal ki Poori goes very well with curd, aloo ki sabzi, chutneys or pickles.

Ingredients for Dal ki Poori:

  • Wheat flour (Atta) – 1 and 1/2 cups
  • Moong dal – 1/2 cup
  • Fennel seeds (saunf) – 1 teaspoon
  • Red chilly powder – 1/4 to 1/2 teaspoon
  • Turmeric powder – 1/4 teaspoon
  • Oil – 1 tablespoon
  • Salt to taste
  • Few Coriander leaves
  • Oil for frying

 Ingredients for Aam ki lunji :

  • Raw Mango – 1 big size (300 gms.)
  • Sugar – 100 gms.
  • Phoran (Kalonji, Fenugreek (Methi) seeds and Fennel (Saunf) seeds mixed equally) – ½ teaspoon
  • Red chilly powder – ½ teaspoon
  • Coriander powder – 1 teaspoon
  • Asafoetida(hing) – 1 pinch
  • Turmeric powder – 1/4 teaspoon
  • Oil – 1 tablespoon
  • Few Coriander leaves
  • Salt to taste
  • Dried whole red chilly cut/broken into two pieces – 1

Servings: 2-3 persons

Preparation Time: 2-3 Hours

Cooking Time: 30-45 mins.

Method

For making Dal ki Poori:

Soak moong dal in water for two hours and drain the water.

Add dal, atta and all remaining ingredients  in a large bowl. Mix well and add water to make a smooth dough.

Leave aside for half an hour.

Now divide the dough into 8-9 pieces and roll using dry atta and rolling pin.

Fry on pan(tava) using oil turning sides till both the sides are golden brown and till it is crispy. Take care to adjust the flame as per the heat so that the pooris do not get burnt.

For Aam ki Lunji:

Peel the mango and cut it in cubes. Boil the mango pieces in a pan using  one cup of water.

Switch off gas and cover it for 5 to 10 minutes.

Check whether the pieces are soft otherwise boil for some more time using little more water. Keep aside (Do not drain the water)

Now heat oil in a pan and once oil is hot, add hing, phoran and dry chilly pieces.

Add cooked mango along with the water used for cooking the mango.

Add all remaining ingredients and mix well.

Boil for two to three minutes and switch off the gas.

Delectable Dal ki Poori and Aam ki Lunji is ready. Serve hot Dal ki Poori and Aam ki Lunji with accompaniments of your choice (as mentioned above).
