Spinach Soup – mention this and almost 80% people will be found making faces! Some will call it food for the sick and some will be like how can they have spinach soup when they do not like spinach at all. Well, in cooking most of the times it takes just small twists or additions to give any dish that punch which can tingle everyone’s taste buds. The health benefits of spinach is known to one and all, and this spinach soup recipe is so delicious that you will have to put in no efforts to make your family have it once they get a taste of it. As we say, this recipe is a perfect combination of nutrition and taste!
Ingredients:
- Onion – 1 medium sized
- Fresh Spinach(Palak) – 3-4 bunches (Approx. 200 gms.)
- Garlic – 3 pods
- Ginger – 1/2 inch piece
- Green Chillies – 2-3 pieces
- Milk – 1 cup
- Oil – 1 table spoon
- Fresh Cream (Malai) – 2 teaspoons
- Salt to taste
Servings: 2-3 persons
Preparation & Cooking Time: 20-25 mins.
Method
Wash Spinach (palak) leaves thoroughly and cut roughly into pieces.
Boil the chopped spinach in a pressure cooker in approximately half a cup of water. Please ensure you do not add excess water as then the soup will become too watery.
After the above is cooled, blend the contents in a mixer/blender for a minute and keep aside.
Now cut onion, garlic, green chillies and ginger into fine small pieces.
Heat oil in a pan and fry onion and garlic for half a minute. Add green chillies and ginger and fry a little more.
Add blended palak, milk and salt in the pan, and stir well.
Check and adjust the consistency of the spinach soup.(Add little water if required). Boil the soup for a minute and switch off the gas.
Take out the soup in a serving bowl. Top it up with little fresh cream or malai.
Piping hot and tasty Spinach Soup is ready. Serve hot with any spicy namkeen or any other snack of your choice.
