Our Guest Chef this week is Neelambari Warty whose current abode is in the majestic city, Dubai. She loves traveling to experience new cultures and to meet diverse people. Apart from this, an important factor that she enjoys about being a wanderbug is the opportunity she gets to taste local cuisines. She openly accepts that she lives to eat! However, she believes in healthy eating habits and ensures she burns those extra calories by going on long runs and getting involved in many other fitness activities. With looks to die for, she is a perfect example of the mantra – “Eat well and burn the excess”. Out of her many cooking attempts, the biggest hit among her family and friends has always been this luscious dish called “Chicken Delight”. This one is a treat for chicken lovers and though preparing it requires hard work, once it’s ready you will be tasting the best chicken dish you might have ever had in your life! So, here’s presenting the recipe of Chicken Delight from Neel’s Kitchen 🙂
Ingredients:
- Chicken – 1 Kg.
- Onions – 10 medium sized
- Tomatoes – 2 medium sized
- Ginger Garlic Paste (Home made) – 100 gms.
- Coriander Leaves – Handful for garnishing
- Salt – To Taste
- Turmeric Powder – 1/2 teaspoon
- Bay Leaf – 1
- Red Chilli Powder – To Taste
- Fresh Cream – 2 tablespoons
- Garam Masala (Home made) – 3 tablespoons ( Includes cinnamon, cloves, black pepper, cumin seeds, coriander seeds, two cardamoms )
- Cooking Oil

Preparation Time:Â 20 mins.
Cooking Time:Â 35-40 mins.
Method
Warm a pan and add all the ingredients for Garam Masala into it. Roast till they just about turn brown and start giving out an aroma.
Turn off the heat. Once the roasted ingredients cool down, grind them to a fine powder and keep aside.
Wash the chicken properly and cut into pieces. Apply turmeric powder and salt to it, and leave aside.
Now, finely chop the onions and fry in 4 tablespoons of cooking oil till onions are golden brown. Let it cool and then make a paste of them using a mixie/blender.
Finely chop the tomatoes and fry them in same pan in which the onions were cooked till the tomatoes are well-cooked into a paste.
Keep onion paste and tomato paste aside.
Take a large non stick pan and warm 1 big scoop of cooking oil in it.
Add a bay leaf, the garlic ginger paste (100gms) and put the chicken pieces into it. Stir and cook for 10 minutes.
Then add the garam masala powder (around 3 tablespoons) and continue to cook and stir for another 10 minutes.
Add the onion and tomato paste and mix well. Keep stirring for 15 minutes.
Now, add warm water depending on the consistency of the gravy you desire.
Add red chill powder as per your taste and mix well. Remember here that you have already added black pepper and other ground spices, so that the dish does not become too spicy for you to handle.
Add 2 tablespoons of Fresh Cream. Garnish with fresh coriander leaves. Delicious Chicken Delight is now ready to be served.
