Dilkushar

Dilkushar, also known as “Besan ki chakki”, is a traditional Rajasthani sweet dish made of Gram flour. It is often prepared during Indian weddings and festivals like Diwali and is enjoyed with gusto by family and guests. It has a nice and crunchy texture, and normally requires some practice to perfect it. This simple recipe of Dilkushar will make it easy for you to attempt making this delectable sweet.

Ingredients:

  • Besan (Gram Flour) – 1 cup
  • Sugar – 1 and 1/4th cup
  • Ghee (melted) – 3/4th cup
  • Grated Mawa or Khoya – 3/4th cup
  • Silver Foil (Chandi Ka Vark) for decoration

Servings: 15 pieces

Preparation time: 15 mins.

Cooking Time: 20 mins.

Method

Put besan in a large bowl and add one teaspoon of ghee. Rub with both the palms and mix well till the mixture resembles bread crumbs.Keep aside.

Grease a tray or plate with ghee (2-3 drops) and keep aside.

In a heavy-bottomed pan or kadhai, add the remaining ghee and the above besan mixture. Cook on medium heat and keep stirring continuously till it turns brown.

Add khoya and cook for 2 to 3 minutes. Switch off the heat and remove the cooked Besan khoya mix into a bowl.

Now, add sugar and  1/2 cup of water in a pan and boil at high heat. Stir in between till sugar syrup is of two-string consistency.

Add the Besan Khoya Mix  in the sugar syrup and cook for 1-2 mins. till the mix starts leaving the pan and starts coming together. Switch off the heat and stir well to ensure a smooth and consistent mix.

Pour the mixture on the greased plate or tray and spread evenly with the help of a small katori ( bowl) after greasing bottom of the bowl with ghee.

Decorate with silver foil. Cut it with a knife gently into pieces of desired shape and leave it on the plate to cool.

After approximately half an hour (or till it is cooled), remove the pieces one by one from the plate and store in an air-tight container. Dilkushar is ready to be relished.
