Poha

Poha or flattened/beaten rice is an easily digestible form of raw rice which can be used to prepare variety of dishes and snacks. It is commonly prepared for breakfast in India, however I personally enjoy having it for lunch or dinner as well especially when I want to have something light and healthy.  This recipe of poha is simple, quick and your perfect comfort food!

Ingredients:

  • Poha(Beaten/Flattened rice) – 2 cups
  • Onion – 1 medium sized
  • Potato – 1 medium sized
  • Tomato -1 small sized
  • Green peas – 20-25 pieces(after peeling)
  • Carrot(optional) -1 inch piece
  • Green chillies – 1-2
  • Coriander leaves – few
  • Turmeric powder – 1/4 teaspoon
  • Black pepper powder – 1/4 teaspoon
  • Mustard seeds – 1/4 teaspoon
  • Oil – 2 tablespoons
  • Salt to taste
  • Sev for garnishing

Servings: 2-3 persons

Preparation Time: 10 mins.

Cooking Time: 10 mins.

Method

Wash poha well and drain the excess water. Leave it aside for sometime.

Chop all the vegetables separately in small pieces and keep aside.

Heat oil in a pan. Add mustard seeds and when they splutter, add all vegetables including green chillies (except tomato and coriander leaves).

Add a pinch of salt and turmeric powder and keep stirring in between till vegetables are cooked on low flame.

Add poha to the cooked vegetables and mix gently.

Add tomatoes, coriander leaves, black pepper and salt. Mix well and cook for about two minutes on medium flame. Poha is ready now.

Serve hot Poha and garnish with sev while serving. You can also serve along with tomato ketchup or green chutney as per your preference.
