As I even type “Kesar Pista Kulfi“, I feel so tempted to have it. That is the impact of this extremely popular and yummilicious dessert. Kesar Pista Kulfi is almost like ice-cream but at the same time it is not an ice-cream. It is not just a desired dessert in India but is liked worldwide. The touch of kesar and pista add an idyllic feel and taste to this dessert. A favourite with our whole family, it is perfect to be had anytime and anywhere.
Ingredients :
- Milk – 1 Litre
- Sugar – 1/2 cup
- Pistachios(Pista) – 6-7 pieces cut in small pieces
- Almonds – 3-4 pieces cut in small pieces
- Cornflour – 1 tablespoon(heap)
- Few strands of saffron (Kesar)
- Powdered Cardamom(elaichi ) – 1/4 teaspoon (Optional)
Servings: 3-4 persons
Preparation Time: 90 mins
Setting Time: 12-14 Hours
Method
Boil milk in a heavy bottomed pan or kadhai.
Once milk is boiled, keep it on low flame. Keep stirring in between and cook till quantity of milk reduces to half.
Add sugar and mix well. Mix cornflour in 2 tablespoon of water (ensure no lumps are formed) and add to milk. Stir well and switch off the heat. Add kesar and dry fruits and let it cool.
Once it is cooled, pour into kulfi moulds or in a plastic/aluminium tray. Keep it in the freezer for 10 to 12 hours till it sets.
Kesar Pista Kulfi is ready to be served.
