Baingan Masala is an aromatic and spicy dish which is unique due to the blend of various spices. This is a dish which is relished by even those who dislike baingan (also called brinjal or eggplant or aubergine). It is not a popularly known fact that baingan helps keep diabetes in control.It is rich in iron and is good for heart and the brain. This dish makes for a delicious meal along with steamed rice.
Ingredients:
- Baingan(Brinjal) – 500 gms.
- Sambhar Masala – 2 tablespoons (Level)
- Coriander Powder – 1 tablespoon
- Red Chilly Powder – 1 teaspoon
- Turmeric Powder – 1/2 teaspoon
- Cumin Seeds – 1/2 teaspoon
- Asafoetida (Hing) – a pinch
- Few finely chopped coriander leaves for garnishing
- Salt to taste
- Oil – 3 tablespoons
Servings: 3-4 persons
Preparation Time: 10 mins.
Cooking Time: 10 mins.
Method
Wash the baingan well and cut into cube sized pieces.
Now take a pan/kadhai and heat oil. Once oil is hot, add hing and cumin seeds.
Once cumin seeds begin to splutter, add the baingan pieces, salt and turmeric powder.
Stir well on high flame for about 2 minutes.
Then cook covered on low heat till the baingan pieces are half cooked.
Add sambhar masala, coriander powder and red chilly powder, and mix well.
Cook for few more minutes till baingan is well cooked but not overcooked.
Switch off the heat and garnish with chopped coriander leaves.
Baingan Masala is ready. Serve hot with steamed rice.
