Vegetable Fried Rice is an excellent option for a one-pot meal. You get all the nutrition from the vegetables and the rice together, and it does not require much effort too. This is one of my favorite dishes to prepare on days when I have to cook for only myself or when am short of time and energy. It is a quick, healthy, attractive, colorful and tasty dish which is a hit with kids as well.
Ingredients:
- Rice – 2 cups
- Onions, finely chopped – 1.5 cups
- Tomatoes, finely chopped – 1/2 cup
- French Beans, finely chopped – 1/2 cup
- Peas – 1/2 cup
- Carrot, finely chopped – 1/2 cup
- Garam Masala – 1 teaspoon, level
- Black Pepper Powder – 1/2 teaspoon
- Ginger – 1 inch piece
- Salt to taste
- Few finely chopped coriander leaves for garnishing
- Oil – 2 to 3 tablespoons
Note: You can use additional vegetables of your choice.
Servings: 3-4 persons
Preparation Time: 10 mins.
Cooking Time: 20 mins.
Method
Wash the rice well. Take rice in a container and add water for boiling. Add peas so that it gets cooked along with rice. Boil it till rice is soft but not mushy. Once rice is cooked, drain all the water and keep aside the cooked rice and peas.
Finely grate the ginger piece and keep aside.
Now in a pan, add oil and heat it. Once oil is hot, add onions and ginger, and saute for few seconds.
Then add carrots and beans, and continue to saute till they are almost cooked.
Add tomatoes and saute for some more time till all the vegetables are well cooked.
Add garam masala and black pepper powder to the cooked vegetables. Mix well and turn off the heat.
Now add the cooked rice and peas to the vegetables. Wait for it to cool down as mixing when hot can make the rice mushy.
Once cooled, gently mix the rice and the vegetables together. Garnish with coriander leaves.
Vegetable Fried Rice is ready. Serve hot with any raita of your choice or plain curd.
