Desi Masala Bread

This recipe of Desi Masala Bread is the winner recipe in our 4 Year celebration baking contest. This was submitted to us by Shubhra Shorey from Delhi. She is a kitchen maniac with a great passion for cooking. She is a huge fan and follower of Sanjeev Kapoor. Cooking gives her immense happiness and she is very good at baking too. Desi Masala Bread is a crunchy, filling and a truly desi flavorsome snack which is perfect to be relished with a hot cup of tea in evenings. It is also a great snack idea for get-togethers. Desi Masala BreadIngredients:

For Bread

  •  All purpose flour – 2 cups
  •  Whole Wheat Flour – 1 cup
  •  Fresh Yeast – 10 gms.
  •  Butter – 1 tablespoon
  •  Sugar – 1 tablespoon
  •  Salt – 1 teaspoon
  •  Milk for milk wash

For Filling

  •  Paneer chopped into small cubes – 150 gms.
  •  Carrot chopped into small pieces – 1
  •  Finely chopped coriander leaves – 1 tablespoon
  •  Finely chopped red bell pepper – 1/2
  •  Finely chopped yellow bell pepper – 1/2
  •  Finely chopped green bell pepper – 1/2
  •  Finely chopped garlic – 1 tablespoon
  •  Mixed Herbs (as available or as per your choice) – 1 teaspoon
  •  Black Pepper Powder – 1/2 teaspoon
  •  Red chilly flakes – 1/2 teaspoon
  •  Oil – 2 tablespoons
  •  Grated Cheese – 3/4 cup

Servings: 4 Persons

Preparation Time: 2 Hours for resting the dough and 20 mins. for remaining preparations.

Cooking Time: 30 mins.

Method

Mix yeast with sugar and one-fourth cup lukewarm water. Stir well and keep aside for 10 mins.

Sift the flours and salt in a large bowl. Make a well in between the flour. Pour the yeast mixture and water as required into the well, and knead into a soft dough.

Transfer the dough on a floured surface and knead until the dough is smooth and elastic.

Keep the dough again in the bowl and cover with a damp cloth. Leave aside for around 2 hours or till it doubles.

Now to prepare the stuffing, take a pan/wok and add oil. Heat it.

Once oil is hot, add garlic and saute on low flame. Add carrots and saute a little more. Add all the chopped bell peppers and paneer cubes along with all spices and herbs.

Add salt and mix well. Switch off the heat and let it cool.  Now add the grated cheese. Stuffing for Desi Masala Bread is ready.

Preheat the oven at 180°.

Knock the dough again for some minutes.

Now grease a rectangular bread tin. Dust some refined flour on a plain surface and roll out the dough with a rolling pin into a big square shape.

Now spread the prepared stuffing in the middle of the rolled out dough. Fold it from one side and then the other so that it is closed well.

Arrange the above dough in the rectangular tin. Now give it a milk wash.

Spread some more herbs and chilly flakes on the top.

Now bake the above in the preheated oven for around 30 mins.

Remove from oven. Apply some butter and cut into pieces as desired.

Desi Masala Bread is ready. Serve hot with a cup of tea or coffee.
