Shakkar Para (also known as Rajasthani Petha) is a traditional Indian sweet which is commonly prepared during festivals. The best thing about Shakkar Para is that it is medium sweet and is more like a “snack” than a dessert. This is the reason it does not last that long at our home even though it can be stored easily for 2-3 weeks. Due to its snack like form, it is gobbled up by everyone in no time !!!
Ingredients:
Preparation time: 20 mins.
Cooking Time: 40 mins.
Method
Take a big bowl and add maida and ghee in it. Mix well with your palm. Make a very hard dough by adding approximately half cup of water slowly. Leave aside for 5 minutes.
Knead the above again and divide into two equal balls. Press gently with palm and roll each ball till it is about half cm. thick.
Cut the rolled dough with a knife in diamond or rectangular shape in small pieces of about one inch size.
Add oil in a heavy bottomed pan. Heat the oil and once it is hot, turn flame to low/sim.
Now add about 15-20 pieces at a time and increase the heat to medium. Fry till it is golden brown and continue this process till all the pieces are done.
Keep aside for cooling at room temperature.
In another pan or kadhai, mix sugar in half cup of water and bring it to a boil. Continue to cook till sugar syrup is about 3 thread consistency (hard syrup).
Turn the heat to low flame/sim and put all the pethas in the syrup. Mix it quickly so that all the pethas are coated.
Switch off the heat. Turn the pethas upside down gently to ensure that pethas are not clumped together. Shakkar Para or Rajasthani Petha is now ready.
After it is completed cooled, store Shakkar Para in an airtight container.
