Coconut Barfi is a very enjoyable Indian sweet dish which is prepared by cooking fresh coconut in ghee. It requires very few ingredients and yet is flavorsome. It has a soft texture due to which it melts into the mouth easily and does not feel heavy on stomach unlike many sweet dishes. Coconut Barfi is prepared traditionally in many states of India with slight variations and is considered auspicious as it is used as offerings during religious ceremonies at some places. This simple and quick recipe is our method of preparing Coconut Barfi and we hope you all enjoy it.
Ingredients:
- Coconut (scrapped) – 2 cups
- Sugar – 2 cups
- Ghee (melted) -1 tablespoon
- Silver Foil (Chandi Ka Vark) for decoration
Servings: 25 pieces
Preparation time: 15 mins.
Cooking Time: 20 mins.
Method
Mix scrapped coconut in 3/4th cup of water and grind well for 2-3 minutes in a grinder.
Grease a tray or plate with ghee (2-3 drops) and keep aside.
Transfer the ground coconut in a heavy-bottomed pan or kadhai and add sugar in it.
Cook on high heat and keep stirring continuously.
When it is half cooked, turn the heat to low flame/sim. Now add ghee and continue stirring.
Cook till the mixture starts to leave the side of pan and forms a single dumpling.
Pour the mixture on the greased plate or tray and spread evenly with the help of a small katori ( bowl) after greasing bottom of the bowl with ghee.
Decorate with silver foil and leave it for 2-3 minutes. Cut it with a knife gently into pieces of desired shape and leave it on the plate to cool.
After approximately half an hour (or till it is cooled), remove the pieces one by one from the plate and store in an air-tight container. Coconut Barfi is ready to be relished.
